When it comes to wedding cakes, the design might be the first important step in finalising it. But the most crucial is the flavour. Long gone are the days of classic chocolate or vanilla, as wedding cakes have truly evolved to become statement-making element, both inside and out. “The cake is a focal piece in the majestic room set for a client’s special event. Flavours are always the first element of our consultations as this is when the cake tasting takes place,” shares Kiran Mandalia of Cake Boulevard.
The UK-based cake artist is renowned for her couture creations and never recreating the same cake. “For the cake to stand out the couple, must embrace having height on their cake, otherwise the focal piece is merely a spec in the vast grandeur of their spectacular set up,” she adds.

Classic Flavours
“Cake Boulevard has a wide array of flavours. The most popular is our Ferrero Rocher Mocha and Chocolate with Salted Caramel. We have ensured our chocolate cake is light in flavour but rich in colour and therefore suiting a wider flavour palette. Our classic flavour which has been a hit since I can remember has to be our Cinnamon & Caramel. Other classic timeless flavours have to be Victoria Sponge with Raspberry compote and Vanilla buttercream, Chocolate Cake with a chocolate buttercream filling and the now classic Red Velvet Cake.”

Our concept is to provide favours that are unique, and guests feel somewhat spoilt by the gesture from the couple. Our new star flavour that has shone bright of late is Rose & Pistachio. Another unique flavours that we have created for our clients include Lemon & Blueberry cake, Vanilla cake with an apple and cinnamon compote for the filling, Mango & Passionfruit cake, Toffee & Salted Caramel, Ferrero Rocher & Cappuccino. Clients should not close the door to adding their favourite chocolate to the filling such as Rafaello, Ferrero Rocher, Oreo or even their favourite liquor, a hint of Baileys works well infused into the buttercream.”
